Seven Layer Super Bowl Party Dip

RECIPE

RECIPE: HALAL 7-LAYER SUPER BOWL PARTY DIP

halal seven layer dip with refried beans

Seven-layer dip is a staple food at Super Bowl parties. If you're going to a Super Bowl part this Sunday, try this recipe. It’s easy to prepare, feeds a crowd, is halal and tastes delicious.  This version uses halal vegetarian refried beans instead of haram traditional refried beans, made with lard. Make your own refried beans by following the instructions provided, or use a commercial brand’s halal vegetarian variety. Serve with unflavored, salted nacho chips.

Watching your waistline? For a version that’s lighter on fat and calories, choose 90% lean beef (or higher), low-fat cheddar and fat free (or low fat) sour cream.

   3 quarts of water
   ½ cup chopped onion (optional)
   1 Tbsp Mexican chili powder

1. SOAK dry pinto beans overnight in plenty of cool water.
2. BRING beans to boil in large pot with plenty of water. Then lower heat to medium low, cover, cook for 2.5 to 3 hours more.
3. STRAIN most of the water from beans when fully cooked.
4. HEAT a deep, wide cast iron or stainless steel pot on medium high heat.
5. COOK the optional onions in oil until translucent.
6. ADD the strained beans and about a ¼ cup of water to the pan.
7. MASH the beans in the pan, while cooking in the oil, until they are a rough purée.
8. ADD water as necessary to keep the fried beans from drying out.
9. ADD spices and salt to taste.
10. ADD a few slices of cheddar cheese, or some (1/2 cup) grated cheddar cheese. When beans are heated through (and optional cheese melted) the beans are ready to serve.
